watched, and even thought it was fine, the shop still wanted to cut it.  I
said No and asked what their argument was to mill it.  They just looked
funny at me and promised not to touch it.  The valve work they did was great
and the head is back on the car and running great.
  So, don't let they hack away at your R16 head if they don't have to.  If
you do need it cut, make sure the shop you are using has done work on old
aluminum.  It cuts a bit different than the alloys they use today.
