It's a piece of cake, Pat.  All you have to do is flash the field to reverse
the output.  The instruments are of the bi-metal design and use heat to
deflect (except the ammeter as you noted).  If the wiper and blower motors
are of the permanent magnet design they would have to be reversed as well.
If they are series wound (like the starter) it wouldn't matter.
