I still have interest in the answers that are being looked into regarding
the mixture issue and using British needles but here is a reply I got from

To some extent the roadsters typically run rich at idle.
You can get some relief by going to the earlier carb needles
for the SU's (i.e. from a '67). Yes, '68 - '70 2000's were
set to run richer, to allow for a more complete "after buring"
by the air injection system.
Need to do some research on other common SU needles to see
what we might come up with.
I've used the "stoich point" oxygen sensor... but with a roadster
you should always be running RICH. Forget those fancy display
models that attempt to tell you what a/f ratio you are running.
Alas, the "wideband" oxygen sensors are wideband in the LEAN
region, not the rich region (where we tend to fun).
Hmm... Embedded Systems Conference is in Chicago from March 31-April 2.
I'll either be there, or the show in May (London).... choices, choices.

P.S. Darn, almost got it though... planning a evaluation lab in
Detriot. Fully equiped with an engine/chassis dyno. Yes, a Motorola
lab to check prototype hardware. Looks like the budget got chopped...
wonder if I can get an engine stand adapted for the U20 made up.
