Slop in the steering after a rebuild of everything else sounds like an
out of adjustment peg & worm to me. The peg can be adjusted per the
workshop manual. There is an adjustment on the top of the steering box.
Shimmy can come from a number of places regardless of how tight the
steering is. Out of true wheels or unbalanced tyres are the most common
culprits.
If you have never replaced the trunions they are probably worn out. Lift
a front wheel and shake it around while looking for sources of movement.
