If the thermostat is in place and working I see no point in welding it open.
It will open when the desired temp is reached. If you want the car to run
cooler, try a different thermostat.
If you aren't sure that the thermostat is opening all the way you can easily
test it by heating it in a pot of water on the stove.
All that welding it open will do is make the car take longer to warm up.
