Everyone seems to recommend 75/25 CO2/Argon mix for general work.

More is always better. I'd go with the 40.
FYI, plan on practicing a fair amount before you do critical welds like
the rollcage. I'm doing the same thing as you (learning to weld and doing
my own stuff). After about a 2 lb spool of wire, I'm starting to get
welds that I'm comfortable having on my rollcage.
It also wouldn't hurt to take a class at a local tech school. They're
usually pretty cheap and I think you can learn a lot.
