You're correct.

If your car is +/ve earth, then the 'hot' terminal is the -/ve.

The procedure is as per your install sheet.

1. Turn on the ignition.
2. 'Flash' the live contact (using any old piece of wire) from the -/ve 
terminal to the field contact (smaller of the two) on the generator. The 
large contact to the voltage regulator should be connected.
3. Reconnect all contacts.
4. Start the car.
5. If you have no ammeter, switch on the lights. These should dim down 
slightly at idle speed, and brighten as you increase engine speed beyond 1200 
RPM or so.
