I'm inclined to second the observation of Nick in Nor Cal. I think a tad too much toe-out, combined with even more toe-out, aka bump steer, under heavy weight transfers, is the culprit. The car will never have enough brakes, but the darty-ness can be tuned out. As for expecting too much - of course you are :) That's part of the fun.
