I need some help figuring out why Ginger sometimes decides to stop!

In the last month or two I have replaced points, plugs, cap, rotor, and
timing chain (trying to stop an oil leak!)  I've messed with the timing and
carb settings (Weber downdraft).  All in all she runs great - then,
yesterday afternoon she just dies.  I open the bonnet and wiggle things
around and in ten minutes I'm off again.  There is a bit of a gassy smell
(more than usual) and air is visible in the glass filter if that means
anything.  Also my carb mixture is at about one turn indicating I need a
differant jet.

My guesses in no particular order:
        Bad fuel filters (One at tank, one before carb)
        Bad fuel pump (it's a stock mechanical)
        Carb float screwed up
        Bad Coil 

Is there a good way to limit this list or do I just start replacing???
