I think the engine IS shutting off at speed, but you don't notice until you 
slow
down since the clutch is engaged and the wheels are continuing to turn it 
over.  
Since the tach is zeroing, I would suspect an electrical problem.  Maybe the
ignition coil is marginal and is intermittently failing or check the wiring 
to 
the coil.  I guess even a faulty ignition switch might cause this, 
which you can temporarily bypass for testing.
