IMHO you would be foolish to not test the well for
water quality and quantity. If possible try to find
out if the area has a problem with wells going dry
etc.  The local well drilling company can be a great
source of info as they probably put in most of the
wells in the local area.  The septic system should be
checked as well (groan)...

Also, w.r.t. PEX:  The only disadvantage I can see
is that it is not as rodent resistant as copper.  In
a rural environment I constantly have to deal with
little critters trying to get in and a hole in the
floor with plastic pipe is much easier to chew than
copper.... DAMHIKT!
