I suspected it had a name of that sort, since I was having trouble
describing it without using language with that connotation.  But I've never
heard anyone talk about the things that I recall...

The only name I ever heard it called was pony pecker, at least in Texas.
I would think that it would be the same for both GMC and Chevrolet.
