Addendum to why I said the gasket should be shiny side out.
Most failures of exhaust gaskets are on the intake and exhaust side in many
cases due to vibration. The metal surface of the gasket provides more
protection from intake and exhaust vibration.

All sides are machined surfaces on a Healey.I have two OEM gaskets and both
were installed shiny side out at the factory.
