new to the roadster scene

I was recently given a 1969 1600.  not in bad shape, but definitely a
project.  My 13 year old daughter has already claimed it.  Just took the
head off on Saturday, I was surprised @ how much plumbing is strapped to
that little motor.  Here is my question for the roadster Guru's.  Being
a So Cal car how much of that is smog stuff I can remove?  Planning on
replacing the headgasket and bolting it all together in the next few
weeks.  Anything I should look into while it is apart?.  Any advice will
be greatly appreciated.
