There is another option,
that isn't too much money (compared to the Mikunis)-

get a pair of DCOE's.  40's or 45's with smaller chokes.
They will take some work, 
but they are good carbs, and a pair doesn't cost much more than $700 new- I 
found a scruffy used pair for $200, and spent about $150 fixing and jetting them

As to manifolds- hmmm.  Personally, I'd weld something up, but I have an 
overdeveloped sense of 'do it yourself and save'... anyone know of a budget way 
to go?
