<<Is it possible/ is there any way to change out the engine mounts
without completely pulling the engine?>>
This is fairly easy, one of the first projects I tackled on the
roadster. I went to a Z shop and the guy said 'no way', and then got
methodically talked through the process by Todd Osborne, so I'll give it
a go this time.

-it helps if you loosen both mount-to-engine and mount-to-frame bolts.
I think I found the frame bolts not so bad but the mount to engine tab
had very close webs (gussets), and needed a strange collection of
ratchet extensions and pivots. I may have used the 1/4" drive in order
to have a smaller wrench fit in there.
-jack up engine, distributing load with a pc of wood (don't point load
the oil pan, you'll be sorry) I remember putting the jack on the rear
third of the oil pan, trying to get the engine to rise almost straight
up.
-you want to get the engine to "shrug' to one side, replace that mount,
then shrug the other way
-if, mysteriously, the whole car starts to rise when you are jacking,
the fan is contacting the inside of the shroud (guess how I know that
one!)
-this is always a good time to check the engine grounding cables as well
