Too heavy a return spring can cause wear on the throttle shafts and bushings.
The ideal arrangement would be to have two springs that work symmetrically on
the shaft to eliminate such wear, but that's a bit more difficult to engineer.
Obviously, hooking a return spring onto anything other than an engine component
is a bad idea, because the movement of the engine will affect throttle position
(don't laugh, I've seen it).

Is there any reason not to mount a return spring for both carbs on the
