I dont think the caliper pistons have to move all that
distance everytime you use the brake pedal. The piston
will only go one way unless you remove the pads and
push them back into the caliper body again. Yes, the
pistons can fall out but only if you remove the pads
and most likely the rotor too. There's something called
pad knockback that will give a "long" brake pedal but
it's caused by extremely warped rotors.

The main reason why you should not turn down rotor
beyond minimum thickness is they will warp too easily.
