I would recommend Thor Thorson at VRM in Seattle. Top drawer restorations of all sorts of race cars. BUT, if you want to win Pebble with the car Pete Lovely Automotive is the place IF they will take you. Bring lots, make that LOTS, of money to Butch and Pete.
