The reason you notice the improvement is likely due to substantially higher
energy.  Inductive storage systems, particularly a distributorless system
optimizes the burn time of the spark to the maximum...which is 100's of times
(or even thousands) of times longer than the typical CDI.  Energy is voltage X
current X time.  Its the longer time that makes the difference because as
you've correctly noted, its the spark gap that determines the voltage (and the
wire and plug resistance that determines the current).  With a distributorless
system you transfer more energy to the plug as the gap normally found within
the distributor (from rotor to cap) is eliminated.
