John,
The fact that you were able to add that much water is definitely a sign 
that you had air in the system. Try putting the front of the car on a 
set of ramps to force the air to the radiator. Another lister , Chuck 
Arnold drilled & taped a bleed screw in the top of the thermostat 
housing to solve the problem.
Make sure your thermostat is opening at the proper temp.
