I heard the head nut at BeCool (aluminum radiator manufacturer) say
that increasing core thickness is less effective than increasing
frontal area, but it still increases cooling effectiveness somewhat
because it increases coolant capacity and total surface area exposed to
air.
His recommendation was to increase frontal area first to the maximum
allowed by the car's body panels, then add thickness if the engine
still overheats. He's also a big advocate of electric fans for cooling
the radiator when the car's not moving.
In other words, it depends ( . . . upon a lot of factors).
