I guess it depends on how "concoursey"  you want to be, personally I 
prefer driving rather than showing.  I have installed the Securon 
seat belts from Victoria British in our 57 TR3, this is an inertia 
reel, over the shoulder, three point belt.  Bolts to floor and rear 
fender wells with backing plates. Certainly not "correct" but it 
works, is comfortable and reasonably easy to install.  Of course I 
hope I never really need it.
As to the Grab handle on the dash, I agree on the danger, and just 
hope it is never contacted by anyone, the wife does however use it 
constantly to hold on during "sprited" cornering. So again it is a 
choice...
