That depends on the wood, and your own personal preference.
For oily woods like teak, a spirit-based finish (teak oil!) will be fine.
You can use teak oil on other woods but you have to re-apply it every 2
years. If you don't, teak will turn grey, and other wood can split or
weather.
For dry woods, like Maple or Mahogany, a polyurethane varnish will leave a
nice gloss. They're also fairly sturdy but will flake after few/many
years (depending on the exact formula, and the amount of UV exposure,
etc.)
My suggestion is to get some scrap wood (veneer!), finish it, and see how
it looks. If you like it, use it.
I will be posting another web page in the near future with a brief summary
of my escapades with a teak veneer (over metal) dash in my TR4.
