I would cut the gasket exactly to fit. Since the header and your intake are
dissimilar
surfaces, you want as much compression area as possible on the gasket, without
it extending
into the ports. Any extra will cause those nasty "eddy currents" that
interfere with the free
flow of gases. Any less will lessen the chance of a good seal.

I can't see how it could hurt... Except maybe the smoke and smell as the grease
burns off
when the header heats up. If you are looking for sealant, try using the same
copper coat
stuff that is used on head gaskets.
BTW, my header (from VB) came with its own very good gasket. DIdn't you get
one with yours?
