TR3 restoration - dash

My brother is in the process of doing a complete restoration on his 
TR3.  He is in the process of putting the body back together and
was wondering how to properly restore the dash to it's original
appearance. 
Now the question:  How much, if any, of the dash is covered
in vinyl?  Just the center section? or the whole thing.

All advice appreciated, and any recommendations on restoration
books with pictures would be helpful.
