Jim,
 John is right. Even if you just do summer driving put a thermostat in. Cars
are designed to operate in a specific temperature range. Cooler than
designed is not an advantage! In theory (assuming that other parts of the
cooling system create a restriction equal to or greater than the thermostat)
a removed thermostat will only increase the time it takes to get to that
"specfic" temperature (a disadvantage), but ultimately both conditions will
reach the same temperature.
 Now IF there is blockage in the engine the delay (of reaching the correct
temperature) with a removed thermostat will momentarily give the impression
of better cooling, but not in the long run. Given the blockage you found AND
the removed thermostat I would be incline to say that the two go hand in
hand and that both should be corrected
