Hi Doug,
You can deck the block to where the pistons are flush or slightly sticking up.
On a 289 I built, they protrude .005 and on the 302HO the pistons are flush
with the block.
Ross will make some custom pistons for you.
If you tell them the size of the valves in the 351W heads, they can
accommodate that. Maybe even use a piston with a wedge to get back some
compression.
Someone used to make pistons just for those heads on a 289-302.
You could put a 302 crank in there too.
IMHO, '65 289 heads might be a better choice, but that's what I'm partial to.
