Whatcha trying to do? Burn the meat? The proper method is to put the
meat on the plate while looking at the flame (similarly, the recipe for
making a proper martini involves filling the glass with gin while looking
at a bottle of vermouth on the other side of the room).
This method doesn't apply in the case of liver (which, contrary to
popular belief, is the result of a massive conspiracy by elementary
school lunch room ladies everywhere, and maybe the communists); liver
requires a bit more flame and cooking time. The proper method of cooking
liver is to place the liver on a double thickness of tin foil, surround
with thin sliced onions, add seasoning to taste, and dropping in 2
tablesppons of butter (real butter, not margarine). Fold the tin foil
around the liver to make a compact, leak-resistant package. Take the
package out to your LBC, drive to the local waste incinerator, and place
the package in the firebox. Drive home. Order pizza.
