it's not CO2, it's nitrogen. They (Guinness) found that using CO2 caused
the beer to absorb a "tin" taste. The nitrogen is inert and doesn't spoil
that rich taste while still producing the rich head.

The "Widget" in the can of Guiness is a ball that contains compressed
CO2. It is designed so that when the pressure of the can sealing process
is released it dumps a bunch of carbon dioxide into the beer. The idea is
to keep the carbonation fresh until time to open the beer. Helps maintain
the tradional "head" that Guiness has. The description of the "Widget" is
on the can.
