This sounds like a capillary tube sensor - a fine but hollow tube that is
permanently fixed to the gauge at one end and permanently fixed to the sensor
at the other. There is a waxy substance in the sensor and tube that expands
when warm to give the gauge its reading.
In the event the capillary tube is not permenantly attached the gauge is
history, likewise the sensor (costs more to repair than buy now). The twisty
spring wire is I guess their to protect the tube.
Other temperature gauges are wholly electric and the sender sends an electric
signal to an electric gauge to produce a reading.
