The reason panels, and wood for that matter, warp is due to unequal absorption
of water.  If you finish (seal) one side of a board and do not seal the other
side, if the board is exposed to moisture, the Board will warp away from the
unsealed side as that side absorbs moisture and expands.  Similarly, if you
have a warped unfinished board, and lay it on the grass in the sun with the
curved side up--the sun will dry out the moisture laden convex side, and the
concave (down) side will absorb moisture from the grass, and the board will
straighten (finish it NOW!), and then if left there will warp the other way.

I might suggest that if you do go back to your panels that you seal both sides
of the panels with a sealer, like a polyurethane varnish.  And I like the idea
of the 30 # tar felt between the door and the panels.
