And now I have come to the front sway bar...the driver side link(the thing
with the ball at the end of it) won't come loose with the nut/stud/nut
arrangement. It freely turns. The mounting to the wishbone has 2 plates over
it that won't let me get a wrench in there to hold it
as I undo the nyloc nut....

If you're talking about what I think you're talking about, I've often
resorted to jamming a very large screwdriver blade in to hold that "hex" piece.

1. My left mounting plate for the bushings is twisted at the free end. Front
part is too high, rear part too low. How hard would it be
to bend this back? I was thinking of mounting a super-big nut&bolt, and
using a cheater bar to bend it back, with what little clearance
I have.

Might work. On the other hand, I've seen more than a few of these broken
completely off the frame, so.... :-(

2. The u-bolts holding the bushings on aren't like the ones I see in the
catalog. INstead of a semicircle bottom, it's moreso U shaped
with one side being about 70 degrees, the other at 110 degrees, with
roundish corners. Is that OEM?

I think that's about right. But most original ones for the US market had
extra loops in them for purposes of securing tie-downs (and making for a handy
place to put the one end of a tow rope for emergencies). I've seen that style
on eBay once or twice (sorry, I do NOT remember the seller's ID), but most
vendors just seem to sell what is essentially the "U" bolt.

*Mrs Irrelevant: Oh, is it a jet?
*Man: Well, no ... It's not so much of a jet, it's more your, er,
Triumph Herald engine with wings.
