I suggest using engine #1 with its original head, because it
sounds like you can can get it installed and running with the least
amount of work. And I would not worry about that head.
If the head is OK, but simply does not have hardened seats,
you can probably use it for years, and then do the valve job
when it actually needs it.
IMHO, the people in England seem to worry too much
about unleaded gasoline.
If the engine turns out to have problems under actual driving
conditions, then all you have wasted is the time needed to install it.
