Fred - yes there are devices that would do just that. The common term is a
"time delay relay" and they are generally a small relay with a built-in
"solid state" delay circuit in them.
They are quite common in the electronics trade and may even be available
from Radio Shack. They come as a fixed time or adjustable versions.
Can't think of the name of the big electronics store in Calagary but they
would have something that would do a simple delay like you are looking for
at a fairly reasonable price.
They work, for what you want to do, by delaying the change of contacts from
the time power is applied (ignition on) and then switch contacts. All you
would need to do is wire the relay across the ignition "on" side of the
switch (like where a radio would connect for instance) and then wire the
light through the normally closed contacts. When the time period is over,
the relay will switch to a "non used" set of contacts and the light will go
off.
