Heck of a choice to have to make!  I would think that the decision would be 
based on what you are trying to do.  If it's a restoration to make the car 
"showroom," go with the walnut.  Personally, I think that the maple would 
look fantastic, but I'm not trying to do a showroom restoration on mine.  It 
basically all comes down to aesthetics; what do you like?
