If your race car has less than 300 lbs/wheel, you can weigh
each axle with a scale under each wheel.
Block up the other wheels so the car's level othewise you
will read slightly low. (although wth a car's wheelbase, it
might be such a small effect that you can ignore it).
If you have more than 300 lbs/wheel you could put a board across the two scales
and use two scales under each wheel.
Whatever, to get the total weight, add up all the scale readings.
