A local shop here in Orlando has made several of these panels. On the '57 it's
pretty easy because the underside of the dash is a flat surface. Any sheet
metal shop can make up a "box" the width of the dash for you, you will have to
cut it out to fit around the steering column, but then it would just mount to
the dash with a few sheet metal screws.
The same shop has fiberglass extension panels for the '47 - '54 dash. These
are more complex because of the curved "drop" area under the speaker grille
area. They sell for about $100, last I checked.
Either version is about 4" tall which allows plenty of room for gauges,
switches, and AC vents.
