Truthfully, there is not 100% safe place for a gas tank. If you're worried
about it, get a safer type like a fuel cell. Or convert to electric! :)
Many of the Sixties era trucks had a second and even a third gas tank mounted
on the side as an option - easily identified by the little panel. My dad's
'70 was also converted to propane too with an additional pressured tank, so a
"full tank" meant 100 gallons of fuel! You could've driven cross country
without a refill, if it didn't get 10 miles/gallon...
Also check out the early Rounded Series trucks ('72+) as a source for gas
tanks. These might be easily moved to inside the frame under the bed. Note
that you'll find them OUTSIDE the frame, which has been the source of many
lawsuits thanks to side impacts.
