All the old flatbeds I've seen (both of them) had all wood beds.  The wood
looked like tonngue-n-groove 2x6's similar to what I have in the stalls in
my barn.  No steel strips.

I would say you need to decide if you are going to acutally use this
flatbed or are going to restore it.  If its for real flatbed use, just get
material that will work and do the job.
