I owned a Jaguar E-type for years and these cars are notorious for the temp
gauge climbing off the scale in hot weather. What I ended up doing was using
a product such as water wetter and changing the anti-freeze/water ratio to
about 80%/20% in the summer months and then changing back to 50/50 for the
winter to keep the car from freezing up. This actually worked quite well and
helped to lower the running temp on really hot days. The primary reason
being that water can absorb and carry  more heat than anti-freeze compound.
Therefore the system becomes more efficient with water. The other thing to
try is to go to 100% water and add a rust inhibitorwater pump lubricant
additive. These are found in anti-freeze solutions and would be required if
you were only using water.
