You can check the thermostat by removing it, placing it in a container of 
water and heating the container - use a thermometer to verify the 
temperature the thermostat opens.

You can also measure the coolant temperature to see if the gauge is reading 
correctly.

The fact some coolant spits out may indicate that you have overfilled the 
radiator. Water expands as it is warmed so if you fill the radiator to 
capacity when its cold, it will be too full. Check the level when its warm 
and fill close to but not full. If its cold when you check the level, be 
sure to keep it a half inch to maybe an inch below capacity.
