Because the head restricts the breathing ability of the engine. It
doesn't really show up until you get to the larger sizes; 1800 or the
big bore sizes (1900, 1950, etc.)
The 1800's head was a development of a 1930's design, and WILL NOT FLOW
anywheres near the capacity of a 4 port, cross-flow, overhead cam head.
The only way to compensate for the antiquated design is to either blow
it (turbo, or supercharger), or use a nitrous oxide system.
