Probably the main reason to start out with pure water is because
anti-freeze will leak from a hole that water will not. On a recent rebuild,
the head can sometimes loosen slightly (hence the need to re-tourque after
about 500 miles), and allow a leak to start.
My auto mechanics instructor (from High School - G*d was that a long time
ago!!) said the reason anti-freeze will leak from a hole when water won't is
due to the lower surface tension of anti-freeze. Maybe some chemist or
something out there can confirm (or flame) that.
