Your oil pressure seems high, but you can't tell for sure until the oil is
hot & you are at idle. The high volume kit comes with several springs for
the pressure relief valve & the instructions should indicate which is the
weakest. If that spring still gives too high an oil pressure, try the stock
spring from the original oil pump, if you have one.
Don't know specifically what fan will work, but I would start with a 16"
puller. Look for a web site for Rainbow Products for high cfm's & thin
motors.
Why would you want to remove the electric pump? First, it is sufficient for
a mild 215/3,0/4.0/4.2 engine, 2nd, it is already in place(?) & wired &
plumbed, third, it will never vapor lock like the mechanical. Besides, the
mechanical pump will probably foul the frame rail.

Now for the teething issues.
I have installed a high volume melling kit into a 300 buick front cover
my oil pressure is about 50 pounds running at 2500 rpm. Ill have to check it
at idle. Im using the swival filter assembly from D&D.
1/ Does this pressure seem excessive? Does anyone out there have a good
recommendation
I could follow for rpm vs pressure so I dont wipe this motor out. Any
help appreciated.
2/ What fans beside the stock ones will fit around a D&D radiator.
3/ Any advice on which mechanical fuel pump I can buy so I can remove the
electrice fuel pump.
