Dan,
  The plastic of sidecurtains and rear window was a flexible plastic,
same as used in TDs. It did stretch and bow, but it rarely broke. Vibrac
was probably a brand name for the stuff, but it's OK to use today's
window material as nobody could tell the difference anyhow. 
  Original hoods were 'duck', which was standard cotton canvas of the
time, and were natural color, which was a soft golden-tan when brand-new,
that faded toward light grey in short order when exposed to sun and rain.
The same material was used on the sidecurtains.  
  Replacing canvas tops was done so frequently that nobody ever thought
of it as anything but routine maintenance. Back in the 50s and 60s, you
saw tops of all descriptions on the T-series cars. Like whitewall tires,
it was a choice owners made for personal preferance. Some tops had larger
rear windows (good for visibility, bad for storage), some had plaid, some
in vinyl, some in canvas. Many had matching covers for the spare tires. 
  Lift the back flap of the top on your car and see if you find evidence
of tack-holes that would have been left when previous top(s) had been
removed and replaced.
