Have the manifold "decked" on the mating surface with the head. If you
have access to a flat plate, place the manifold on it and shine a light
from the back. You will probably see light through the plate and the
manifold in the middle. If you look at the old gasket and head, you will
probably see black or darkened around the center mounting location on
the head, due to exhaust leaks. Decking the manifold is done by some
machine shops. Essentially a belt sander. Skill level of operator will
result in level or off-level finished product.
