If you secure a car by the chassis you render the complete suspension
inoperable. There will be no movement in any parts so the shocks cannot
overheat.
You will only allow movements in the chassis (and shocks) if you secure
the wheels or axles. However this will not lead to overheating in the
shocks. The movements will be less than if the car would be driving on
the road.

Securing the wheels or axles instead of the chassis is preferable
because if the straps or chains to hold down the chassis against the
springs are not tightened enough or work loose you could get extremely
high peak loads in the straps/chains and fixing points when driving over
rough surfaces.
