They apply pressure differently.  The spring rates are lower (hence
the easier clutch), but with the diaphram it applies pressure evenly
over the whole clutch surface.  The lower spring rate should result in
a longer  lasting clutch, but at the same time provide better, more
even engangement over the whole surface of the driven plate.

Yes.

Yes, but any shop can do this.  You just go from two dowel holes to three.

This is a very easy conversion.  If you do make the conversion, you
have to use a BJ8 throw out bearing... it's different.
