steering out; dashboard out

again, early 67 1600 roadster (low windshield)
  steering column is out; dashboard is out.
  the dashboard looks like it was a textured blue paint?  interior i have is 
red but may not be original.  carpet is black; is likely original.  think i'll 
stick with red interior but change from original pale yellow to silver with 
black accent stripes.
  question: what are people doing with dashboards?  what's original?  what 
looks good?  anything to avoid?
